GF Friday: Cinnamon Apple Pancakes

It seems like with GF baking, I take two steps forward and one giant step backward. I really liked the BANANA MUFFINS from last week, and these pancakes are pretty good, too. However, I made some "sugar cookies" yesterday that could have made the heartiest of tummies turn. 
They were nasty.
Thankfully, these pancakes are really good! They're one of the better GF things I've made. They were pretty simple, too. Let me lay it out for you....


INGREDIENTS:
1/2 c. milk (any sort you'd like)
1 egg
1 carton or 1/3 c. unsweetened applesauce
1 tbs agave (or honey)
1 tbs brown sugar
1-2 tsp cinnamon
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 3/4 c. Bob's All Purpose GF Baking Mix
1 chopped apples


(1) Mix it. Beat all liquid ingredients together with a whisk. Add in dry ingredients next. Lastly add your apples (do this just before frying the pancakes if you're chilling the batter over night).
(2) Chill it. I always put my pancake batter in the fridge overnight, a little trick I learned from my dad. It really improves the quality of your pancakes, which in my opinion is sooo important with GF. There's less wiggle room.
(3) Fry it. Over low to medium heat, cook your pancakes on a greased skillet. 


(4) Serve it. We poured real maple syrup over ours and topped with whipped cream and cinnamon. Yum. 


That's all from me today! So sorry that I missed yesterday's post. I've mentioned several times this week that my schedule is beyond crazy. Next week should calm down immensely and I promise not to miss a single day!
