GF Friday- Savory & Sweet Bacon Pancakes

Today's recipe comes to us from the Swedes.
About 10 years ago, a wonderful family immigrated here from Sweden. Thankfully, they joined our church, adding some Swedish spice and bringing a LOT of insanely good food with them. The matriarch makes the best strawberry layered cake in the world. Time went by and I ended up being on the same staff as their son, Johan, and he took after his parents and became a great chef (he also married an incredible baker and chef! I can only imagine how wonderful the food is in their home!).
Every quarter our bosses would host a breakfast meeting in their home and we all brought something to contribute. Johan mentioned this Swedish recipe at a meeting and said he'd bring it with him to our next.
I won't lie, I was a little concerned.
Bacon + pancakes didn't speak to me.
But at the next meeting, I couldn't help but eat TONS!
That was before I went GF. I've thought about the deliciousness of those pancakes ever since... and wanted to share the modified GF recipe with you today. I actually sent he and his wife a message about the pancakes to get a bit of clarification. Johan mentioned that his youngest sister, Sara, had just made them for he and his wife this past weekend and they were as incredible as ever!

Bacon: I used turkey bacon... I know that it isn't very healthy, but I hate pork. It's a once in a while treat for us.
1/2 c. milk (any sort you'd like)
1 egg
1 carton or 1/3 c. unsweetened applesauce
2 tbs maple syrup
1 tbs brown sugar
1 tsp vanilla extract (optional, add another of almond extract)
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 3/4 c. Bob's All Purpose GF Baking Mix

(1) Fry it. Fry up the bacon of your choice. I used 6 pieces, but you could use more or less depending on your love of pork. My brother would probably use an entire package. Maybe two.
(2) Mix it. Start with your liquids and mix everything in. Add your powders and then lastly, crumble the bacon and mix in. Confession? I always make my batter the night before. It's a trick I learned from my dad. It really does work, whether or not your pancakes are GF, give it a whirl. Plus, it's much more satisfying to have minimal prep in the morning. 
(3) Pancake it. Get them on the griddle and cook them up as normal! I actually used the same pan that I fried the turkey bacon in. Just so that it would get a little bit extra yum-ness.
(4) Eat it! Top with maple syrup and enjoy!

The original Good Friday was a brutal, brutal day... but thankfully the story didn't end there. I'm so grateful for Easter. I'm so grateful that Jesus died for me (the whole world!), destroying my sin & imperfection, and then rose again... defeating every part of this world that wants to hold me back.
